Simple Summer Pasta

E-mealz provided us with another new family favorite this week!

I adore this dish because it was ready in under 15 minutes, did not require the use of the oven, used seasonal garden ingredients and would easily satisfy a vegetarian or a meat lover! (Not that any of us Leipprandts fall into the herbivore category, but I think it's considerate to have a few veggiehead friendly recipes up your sleeve just in case!)

Here it is:

Creamy Penne & Squash

8oz penne pasta
2 yellow squash
1/2 tsp dried dill, salt & pepper
1 vine ripened tomato, diced
1/3 cup half n half
5 oz crumbled feta cheese

In a large saucepan, boil pasta. Meanwhile, grate squash (with a cheese grater. I'd never done this before...SO easy!) Add grated squash to pasta for last 3 minutes of cooking. Drain well. Return squash/pasta to saucepan and stir in tomatoes, cream and dill. (I think the dill is critical. Go splurge on some! Better yet, pick it from your garden.) Salt and pepper to taste. Remove from heat and toss with feta. Serve warm with a crisp salad!


YUMMY! B Daddy gave it two thumbs up...which is serious praise from a committed meat lover. And no, I did not plant a vegetable garden this year. Have I already lamented that catastrophe here? It made me so sad to go out and buy squash and a tomato.

Perhaps in the end it's for the best as I'm quite certain I would have up and died from the culinary bliss that is harvesting/cooking/eating all within half an hour.
